What are microgreens? Microgreens are young plants that are harvested just a few weeks after germination, when the first set of true leaves appears. They are essentially mini versions of mature plants, with all the same components, but in a more concentrated form.

Microgreens are often used as a garnish or a topping for salads, sandwiches, and other dishes. They can also be used as a primary ingredient in dishes such as pesto or smoothies. Because they are harvested so young, they are considered to be more nutrient-dense than their mature counterparts, and can contain higher levels of vitamins, minerals, and antioxidants.
